Skimming or finishing plaster is where I would apply approximately 3-4mm of plaster/skim using two passes (two layers of skim) making the required surface perfectly flat. Once the plaster has dried it will be ready for decorating.
If your house is old it may well have backing plaster (undercoat) this is used instead of plasterboard and is situated behind the flat coat of skim. Depending on your circumstances you may require undercoat to be replaced first. There are different types of backing plaster (undercoat) plaster and they vary depending upon the brickwork with which they bond. It is recommended that you skim backing plaster the day after it has been applied, so this will become a two day process.
